These striped meringue kisses are vegan – made with homemade aquafaba – and naturally colored with butterfly pea tea, raspberries and blackberries!
Aren’t these naturally colored striped meringue kisses fun? Not only do they look summery, they’d be perfect as patriotic treat!
Homemade Natural Food Coloring
I used butterfly pea tea, raspberries and blackberries to naturally color the striped meringue cookies. But feel free to experiment with other homemade natural food colorings like red cabbage, blueberries, black currants, pistachios, spinach or sunflower seeds.
Vegan Meringues & Xanthan Gum
Xanthan gum is necessary for vegan meringues. I tried to make vegan meringue cookies without it but that was a fail. The vegan meringues were flat and hollow inside! So for crisp and fluffy vegan meringue kisses you’ll have to add xanthan gum or a similar thickening agent like guar gum.
Striped Meringue Kisses – Naturally Colored & Vegan
Ingredients:
Vegan Meringue Kisses
- 1/2 cup homemade aquafaba (120g)
- 1/4 – 1/2 cup granulated sugar (50 – 100g)
- 1/4 tsp xanthan gum
- optional: 1 tsp homemade vanilla extract
Homemade Natural Food Coloring
- 1 bag butterfly pea tea
- raspberries
- blackberries
Directions:
Vegan Meringue Kisses
Preheat the oven to 100°C (210°F). Line a baking sheet with baking paper.
Stir together all ingredients and beat on high until stiff peaks form. Using two teaspoons, spoon the meringue onto the baking sheet.
Homemade Natural Food Coloring
Cover one bag of butterfly pea tea with boiling water and let it steep for 5 minutes. Remove the tea bag.
In separate bowls, mash the raspberries and blackberries with a fork. Then strain the fruit puree through a fine mesh sieve.
Use the ink blue tea and the fruit purees for the dark blue and pink stripes. For the light blue stripes, stir together some of the tea and whipped vegan meringue.
Striped Meringue Kisses
Other recipes for striped meringue cookies that I found online say to paint stripes down the inside of a piping bag. But that doesn’t work with natural food dyes – it looks marbled not striped – the recipes always used artificial gel food coloring.
So I painted stripes onto the meringue kisses with a fork – you can also use a skewer. I also made some solid colored pink and blue meringue kisses.
Bake the naturally colored striped meringue kisses for about 1 1/2 to 2 hours.
