I made naturally colored green ice cream again! 😀 This time I used fresh wheatgrass juice to color the ice cream. The wheatgrass pineapple ice cream is dairy-free and egg-free, even vegan! It tastes fresh, grassy and sweet of pineapple and coconut.
Ingredients:
- 1 cup pineapple chunks
- 1/2 cup soy milk
- 3 tbsp fresh wheatgrass juice (from about 1/4 cup chopped wheatgrass)
- 3 tbsp creamed coconut *
- optional: 2 – 3 tbsp sugar or 1 banana
- optional: 1 tbsp rum or homemade vanilla extract
* If you don’t have creamed coconut, you can try to substitute it with coconut milk, coconut oil or shredded coconut.
Blend all together in a blender until smooth and creamy. Optional: Strain the green pineapple smoothie through a sieve. Freeze the wheatgrass ice cream in an ice cream maker. Decorate the ice cream with pineapple chunks, strawberries, chocolate and naturally colored blue sugar.
