Natural Blue Cake Experiment - Part 2

I love naturally colored blue food! 😀 In the past I made blue ice cream and blue pasta – all naturally colored with my homemade natural blue food coloring. And at the moment I’m trying to make naturally colored blue cake.

Naturally Colored Blue Cake With Red Cabbage

In part one of my natural blue cake experiment, I got a beautiful turquoise cake – but I don’t know anymore how much baking soda I added! 🙁 So I made test cupcakes again, adding different amounts of boiled down red cabbage water and baking soda to each cupcake.

Blue Cake With Natural Food Dyes

Ingredients:

  • 2 egg whites
  • 175g flour
  • 25g starch
  • 2 tsp baking powder
  • 100g sugar
  • 50ml oil
  • 50ml water
  • 1/2 cup soy yogurt

Beat the egg whites until stiff. Mix the dry ingredients, then stir in oil, water and yogurt, and fold in the egg whites.

Blue Cake Experiment With Natural Blue Food Coloring

I used 4 tbsp batter per cupcake. For most of the cupcakes I used boiled down red cabbage water: made like here (before adding baking soda). I also had leftover hibiscus tea from dyeing Easter eggs, so I tried that as well.

 

Blue And Purple Natural Food Dyes

4 tbsp batter

+ 2 tsp hibiscus tea

+ 1/2 tsp boiled down red cabbage water + 1/2 tsp baking soda

+ 1/2 tsp boiled down red cabbage water + 1 tsp baking soda

+ 1/2 tsp boiled down red cabbage water + 1 tsp baking soda + 2 tsp fresh orange juice

+ 1/2 tsp boiled down red cabbage water + 2 tsp baking soda

Naturally Colored Blue Cake Red Cabbage Hibiscus Tea

This time I added too much baking soda and the muffins turned green! And they tasted terrible: salty and soapy! So there’ll soon be part 3 of my natural blue cake experiment! 😉
