I made speckled blue robin egg truffles with homemade natural blue food coloring! Aren’t they just so beautiful? ๐ And they taste as good as they look!
These speckled blue robin egg truffles are vegan, all naturally colored with red cabbage and chocolate, not too difficult to make and so delicious! ๐
I couldn’t find a recipe for speckled robin egg truffles or speckled egg cake with natural food coloring. But after making natural blue icing with red cabbage and baking soda, I thought maybe I could use that to coat the truffle eggs – and it worked! Yay! ๐
At first I thought I’d make speckled egg cake, but then I thought speckled robin egg truffles would be even cuter! ๐ So here’s my recipe for all-natural speckled blue robin egg chocolate truffles.
Ingredients:
- homemade truffle Easter eggs
- homemade natural blue food coloring
- powdered sugar
- optinal: peppermint essential oil
- melted chocolate
Homemade Vegan Truffles
You can either make vegan hazelnut chocolate truffles or vegan adzuki bean chocolate truffles. It works with both. But don’t dip the vegan chocolate truffles in melted chocolate before you coat them with natural blue icing – it’s easier that way.
Naturally Colored Blue Robin Truffle Eggs
Make icing with powdered sugar and some boiling water (don’t use lemon juice because red cabbage dye is ph-sensitive!).ย Using a fork, coat the vegan truffles with icing and let them dry for about an hour. Now color the icing with two or three drops homemade natural blue food coloring. If you like you can flavor the icing with one drop of peppermint essential oil for chocolate mint truffles. Using a fork, coat the vegan truffles with the natural baby blue icing. Let the blue robin egg truffles dry for some hours or overnight.
Make Chocolate Speckles
Dip a clean toothbrush or brush into melted chocolate and dab the chocolate onto the blue Easter truffles.
I tried to use the same technique which I used for my naturally dyed speckled Easter eggs but that didn’t work with chocolate.
I’m so thrilled how the speckled blue egg truffles turned out! ๐
