This homemade cherry pie is so delicious – with a flaky, buttery pie crust from scratch, homemade cherry filling and marzipan crumble on top!
Cherries are not my favorite fruit but this cherry marzipan pie is so yummy! I baked the pie in a large 12-inch (30cm) pie plate that I found while clearing out grandma’s house. So maybe you’ll have to reduce the amount of dough and cherry filling if you use a regular 9-inch (24cm) pie plate.
Homemade Cherry Pie
Ingredients:
Flaky Buttery Pie Crust From Scratch
- 2 cups flour (240g)
- 1 1/2 sticks butter (180g)
- 1/2 tsp salt
- 5 tbsp cold water
Homemade Cherry Filling
- 6 cups pitted cherries (900g) *
- 7/8 cup sugar (175g)
- 1/2 cup cornstarch (7 tbsp, 60g)
- 1 1/2 tsp homemade vanilla extract
* I used sweet cherries. You can add more sugar if you use sour cherries.
Marzipan Crumble Topping
- 1 part leftover dough (about 1/2 cup)
- 1 part marzipan (about 1/2 cup)
Directions:
Flaky Buttery Pie Crust From Scratch
Preheat the oven to 350°F (180°C).
Cut the butter into the flour with a knife. Knead in the cold water and salt. Put the dough in the fridge for at least half an hour.
Roll out the pie crust on a floured surface and transfer it to the pie plate. Trim the overhanging dough with a knife or scissors. Optional: Crimp the crust with your fingers to make a fluted pie crust edge.
Homemade Cherry Filling
Combine cherries, sugar, cornstarch and homemade vanilla extract in a saucepan. Let the cherry mixture stand for about 20 minutes until the cherries release their juices.
While constantly stirring, cook the homemade cherry filling over medium heat until thickened.
Marzipan Crumble Topping
Knead the leftover dough together with the marzipan.
Pour the cherry filling into the pie crust and crumble the marzipan dough on top.
Bake the cherry pie for about 30 minutes.
