It’s day 10 of my Advent Calendar. Today I’m sharing a recipe for gingerbread lattice and knit look cookies with you. I’d seen those cute woven cookies on pinterest and just had to try them. Then I thought knitted cookies would also look cute, so I came up with an idea how to make knit look cookies.
Ingredients:
- 2 tbsp molasses
- 80g sugar
- 75g butter
- 200g flour
- 1/4 tbsp cinnamon powder
- 1/4 tbsp ginger powder
- 1/4 tbsp clove powder
- 1/2 tsp baking powder
- 35ml water
Heat molasses, sugar and butter over medium heat until dissolved. Stir in the other ingredients with a spoon. Let the dough rest overnight.
On a lightly floured surface, roll out the dough 3mm thick. Cut the dough into strips. Then weave the dough. Use round, star or tree cookie cutters to cut out the cookies.
To make the knit effect cookies: Roll the dough into ropes and twist two ropes together. Twist the next two ropes in the opposite direction. When you lay them side by side, it will look like knitting! Then cut out the knitted cookies with cookie cutters.
Bake the lattice and knit look cookies at 180°C for about 7 minutes.
