This Edwardian spice marble cake is so delicious – a perfect Christmas cake!
The traditional marble cake wasn’t the vanilla and chocolate marble cake. In the Victorian and Edwardian era, marble cakes were usually flavored with spices and colored with brown sugar and molasses. This Edwardian spice cake recipe was published in Three Meals A Day in 1902.

Edwardian Spice Marble Cake
Ingredients:
Light Part
- 4 egg whites
- 2 1/2 cups flour
- 1/2 cup butter
- 1 1/2 cups sugar
- 3/4 cup milk
- 1/2 tsp soda + 1 tsp cream of tartar (or 1 1/2 tsp baking powder)
- 1 tsp lemon or vanilla flavoring (I used the zest of 1 lemon)
Dark Part
- 4 egg yolks
- 2 1/2 cups flour
- 1/2 cup butter
- 1 cup brown sugar
- 1/2 cup molasses
- 1/2 cup sour milk
- 1/4 tsp soda + 3/4 tsp cream of tartar (or 1 tsp baking powder)
- 1 tsp cinnamon
- 1/2 tsp each of cloves, allspice and nutmeg
Directions:
Preheat the oven to 350°F (180°C). Butter and flour a bundt cake pan.
Light Part
With an electric mixer, beat butter and sugar until creamy. Then add all the other ingredients for the light part and mix until incorporated.
Dark Part
In a separate bowl, combine all ingredients for the dark part and mix until incorporated.
Edwardian Spice Marble Cake
Drop spoonfuls of the light and dark batter into the cake pan. Using a fork, swirl the two batters together.
Bake the Edwardian spice marble cake for 1 – 1 1/2 hour or until a skewer comes out clean.

I love that the light and dark portions are actually two different recipes, which probably give the cake a very interesting texture, real marbled mix, like having Angel’s and a Devil’s Food cakes all in one bite.
