Dairy-Free Vanilla Ice Cream

This dairy-free vanilla is so delicious and creamy! And it’s made without coconut milk and raw eggs. Pour homemade 2-ingredients magic chocolate shell over the ice cream, add some fresh berries and you have a perfect summer dessert!

Homemade Creamy Dairy-Free Vanilla Ice Cream

Ingredients:
Dairy-Free Vanilla Ice Cream
Chocolate Shell
  • 60g baking chocolate
  • 1 tbsp almond oil

Dairy-Free Vanilla Ice Cream

Dairy-free vanilla ice cream: Whisk together egg yolks and some of the soy milk. Bring remaining soy milk and vanilla sugar to a boil. Stir in the egg yolk mixture and cook for 1 minute while constantly stirring. Let the custard cool down and freeze in an ice cream maker.

Chocolate shell: In a small saucepan, melt chocolate and oil over low heat, stirring constantly until smooth. Pour the coating over the ice cream and let it harden for some seconds.

    I used to love the chocolate shell type sauce as a kid but got put off it when I saw all the chemicals that go into it. The idea I could make my own so easily is very exciting!
