This creamy and easy to make blue-green pudding is naturally colored with homemade natural blue food coloring! Isn’t the color amazing?

Ingredients:

  • 500ml (soy) milk
  • 4 – 5 tbsp starch or flour
  • 2 -3 tbsp sugar
  • some drops natural blue food coloring
  • flavoring: rum or 1 -2 drops essential peppermint oil

Stir together starch, sugar and some of the milk. Color the remaining milk with natural blue food coloring, flavor it with rum or peppermint oil, and bring the blue milk to a boil. Stir in the cornstarch mixture and cook for 1 minute while constantly whisking.

I used soy milk foam and naturally colored sugar sprinkles to decorate the pudding.

About the red cabbage taste: If you add too much natural blue food coloring, then the pudding will taste slightly of cabbage. But rum or peppermint oil will help to mask the taste.

You can use the blue pudding to make natural baby blue frosting.
