This Christmas cake in the traditional christmas colors – red and green – is made with  natural dyes – cherry and kale. And don’t worry, the green sponge cake doesn’t taste of kale, it tastes just like ordinary sponge cake!

Cherry Jelly Tree Surprise Inside Christmas Cake

Ingredients:

Kale Puree

  • 1/2 cup kale puree (about 5 curly kale leaves)

  • cherry jelly, red currant jelly or cranberry jelly
  • powdered sugar

Directions:

Kale Puree

Remove the stalks, use just the leafy parts of the kale. Boil the kale with some water for 5 minutes, drain and refresh with cold water. Using a stick blender, puree kale until smooth.

Preheat the oven to 350°F (180°C).

Separate the eggs. Beat the egg whites until stiff. In a separate bowl, beat the egg yolks, sugar and vanilla sugar until creamy. Stir in the kale puree. Then fold in the egg whites and flour.

Bake the cake for 30 minutes or until a skewer comes out clean.

Surprise Inside Christmas Cake

Cut the naturally green kale cake into slices and cut trees out of each slice with a tree-shaped cookie cutter (like here). Then stack the slices on top of each other. Heat the cherry jelly, then pour it into the cut-out hole. Let the jelly set for some hours or overnight.

Before serving, dust the jelly tree surprise inside Christmas cake with powdered sugar.
