Creamy, smooth and satisfying – this pudding from scratch is delicious and very simple to make. And what’s best: the homemade pudding is eggless, dairy-free and even vegan!
Vanilla & Chocolate Pudding From Scratch – Eggless, Dairy-Free, Vegan
Ingredients:
- 2 cups soy milk (500ml) *
- 4 tbsp homemade vanilla sugar (50g)
- 5 tbsp cornstarch (45g)
- optional: 2 tbsp cocoa powder (for chocolate pudding)
* For a less pronounced soy taste, I often thin the soy milk with water.
Directions:
Whisk together cornstarch and 1/2 cup soy milk. Bring the remaining soy milk and vanilla sugar to a simmer. Pour the cornstarch mixture into the boiling milk while constantly stirring. Continue to cook the pudding until it thickens (about a minute or so). Remove the pudding from heat. Serve the pudding hot or pour the hot pudding into dessert bowls and refrigerate until serving.
