Light, crispy and so delicious – these oat flour chocolate chip cookies are naturally gluten-free!
Unlike my soft and chewy naturally green sunflower seed chocolate chip cookies, these oat flour chocolate chip cookies are cripsy and light. The chocolate chip cookies are made with oat flour so they’re naturally gluten-free.
If you don’t have oat flour at home, you can easily make homemade oat flour: either grind oat grains in a grain mill or blend rolled oats in a food processor. I always use chopped baking chocolate for my chocolate chip cookies because it’s dairy-free and cheap but feel free to use chocolate chips instead.
Oat Flour Chocolate Chip Cookies
Ingredients – For 42 Cookies:
- 2 cups gluten-free oat flour (200g)
- 1 stick butter (115g)
- 2 eggs
- 1/2 cup sugar or homemade vanilla sugar (100g)
- 2 tsp baking powder
- 2 tbsp homemade vanilla extract
- 1 pinch of salt
- 1/2 cup chopped baking chocolate or chocolate chips (70g)
Directions:
Preheat the oven to 350°F (180°C) and line a baking sheet with baking paper.
Combine oat flour and baking powder in a bowl. Add the other ingredients (except the chocolate) and mix well with an electic mixer. Stir in the chopped baking chocolate with a spoon.
Roll the dough into walnut-sized balls and place them slightly apart on the baking sheet. Flatten them slightly with the palm of your hand.
Bake the oat flour chocolate chip cookies for 10 – 12 minutes.
