Make a naturally green cake for St. Patricks Day!
The light green cake layer is naturally colored with green peas and the dark green top layer is naturally colored with sunflower seeds!
Ingredients:
Naturally Green Pea Cake
- 135g (1 cup) fresh or frozen peas
- 125g (1 cup) flour
- 75g (1/3 cup) butter
- 75g (1/3 cup) sugar
- 2 eggs
- 1 tsp baking powder
- 1 tsp homemade vanilla extract
White Sunflower Seeds Cheesecake Filling – Vegan & Raw
- 3/4 cup sunflower seeds
- 1/2 cup soy yogurt
- 4 tbsp powdered sugar (or agave syrup or honey)
- 1 tbsp lemon juice
- 1 tsp homemade vanilla extract
- 1/8 tsp salt
Naturally Green Sunflower Seeds Cheesecake Filling – Vegan & Raw
- 1 1/2 cups homemade green sunflower seeds
- 1/2 cup soy yogurt
- 5 tbsp powdered sugar (or agave syrup or honey)
- 5 tsp homemade vanilla extract
Optional Toppings
- flowers, herbs
Cake: Preheat the oven to 160°C/ 325°F. Grease a springform pan.
If you use frozen peas, let the peas thaw. Puree the peas in a food processor until smooth.
Mix all ingredients together with a mixer. Pour the batter into the pan and bake for 30-40 minutes or until a skewer comes out clean.
White layer: Blend the sunflower seeds in a food processor until smooth. Add the other ingredients and blend. Spread the filling onto the cake.
Green layer: Blend the naturally green sunflower seeds in a food processor. Add the other ingredients. Blend again. Spread the filling onto the cake.
Put the cake into the freezer overnight. Allow the cake to thaw in the fridge or at room temperature before serving.
Lovely! And so much more appetizing than green food coloring!
Thanks, Michele! 🙂
Beautiful cake and so unique. It difficult to achieve dark colors with food coloring without getting an unpleasant taste. I love the flowers on top.
Thank you, Lisa!
What a stunning cake. This would be beautiful for a garden party. Can I ask… does it taste of ermmm peas? Or is that masked by the sweetness? Thanks for sharing with the #Dreamteam xx
Thanks, Annette! 🙂 Yes, it tastes a little of peas.
Really interesting. I had no idea you could do that with peas and sunflower seeds.
Thanks for stopping by, Trish!
Wow Lina! I’ve done carrot, courgette, potato, sweet potato, beetroot, black beans and chickpeas in a cake, but peas?! Fantastic! I hope I have some in the freezer! I’m so excited to try this! Thanks for sharing at Fiesta Friday.
