Homemade kiwi curd – creamy, sweet and tart – a great alternative to lemon curd! Enjoy it on its own or serve it on bread, pancakes, cookies or ice cream. Kiwi curd is also delicious as pie filling with meringue topping!
Kiwis turn yellow when cooked so kiwi curd is yellow (not green) unless you add food coloring.
Kiwi Curd
Ingredients:
- 4 – 5 kiwi
- 100g sugar (1/2 cup)
- 100g butter (about 1 stick)
- 4 egg yolks
Directions:
Puree kiwis with a stick blender or just mash kiwis with a fork.
Combine all ingredients in a pot. While constantly stirring, cook kiwi curd for some minutes until it thickens.
Remove the pot from heat and set aside to cool.
Store kiwi curd in an airtight container in the fridge.
