I don’t like to use artificial food coloring but I needed carrots as decoration for carrot patch cupcakes. Therefore I made naturally colored fondant and marzipan carrots. The fondant and marzipan carrots are naturally colored with fresh carrot juice! 😀 They’re easy to make, look and taste great, and keep very well because of the high sugar content. For the fondant carrots I didn’t use real fondant, it’s an easy homemade version of fondant made with just powdered sugar and carrot juice which works just as well as real fondant.
Ingredients:
- carrot
- powdered sugar
- marzipan
Natural Orange Food Coloring
Grate the carrot finely. Using a fine mesh strainer, strain the juice.
Naturally Colored Marzipan Carrots
Knead together marzipan, some drops of fresh carrot juice and enough powdered sugar till the mixture holds its shape. Form into small carrots. Optional: Make indentations with the back of a knife. Marzipan carrots colored with carrot juice are rather yellow. For an orange color, cover the marzipan carrots with naturally colored orange icing (powdered sugar with carrot juice). You can also roll the marzipan carrots in carrot sugar.
Naturally Colored Fondant Carrots
Knead together some drops of fresh carrot juice and enough powdered sugar till the mixture holds its shape. Form into small carrots. Optional: Make indentations with the back of a knife. Let the carrots dry for some hours at room temperature. The homemade ‘fondant’ carrots are soft on the inside and hard on the outside.
