Bremer Osterklaben – sweet Easter bread of Bremen – is a traditional German Easter bread baked for the Easter holiday. It’s a sweet yeast bread made with lots of butter and filled with raisins and candied fruits.
Ingredients:
- 375g flour
- 35g fresh yeast
- 50g sugar
- 60ml lukewarm (soy) milk
- 200g melted butter
- 480g chocolate chips, candied orange and lemon peel, currants and raisins
- 2 tbsp vanilla sugar
- 1/2 tsp salt
Stir together yeast, sugar, lukewarm milk and some flour. Let the sponge rise for 20 minutes. Add melted butter and knead the dough, add water if necessary. Add all ingredients and let the dough rise again for about 40 minutes or longer. Shape the dough and place it in a greased pan. Let the fruit bread rise again for 15 minutes. Bake at 180°C for 45 minutes.
