Since I’ve seen cute carrot patch cupcakes on pinterest, I had to try them out! 😀 The carrot patch cupcakes are dairy-free and decorated with my homemade naturally colored marzipan carrots.
Ingredients:
- 175g flour
- 2 tsp baking powder
- 80g sugar
- 40ml oil
- 3 eggs
- 5 tbsp cocoa powder
Stir together all ingredients. Scoop batter into paper muffin liners. Bake at 180°C for 25 minutes.
Now make the filling: I stirred together 1 part homemade soy ‘cream cheese’ and 1 part vanilla pudding made with soy milk, starch and vanilla sugar. But you can also make icing, buttercream or cream cheese frosting instead.
Cover the cupcakes with filling. Crumble one of the cupcakes with your hands. Dip the cupcakes into the crumbs until they are completely covered with ‘dirt’.
Using a spoon or knife, make an indentation in the center of each cupcake. Now decorate the cupcakes with homemade naturally colored fondant or marzipan carrots. Use celery leaves, carrot greens or herbs as carrot tops.
Very cute. I wonder if I could do something similar with crushed Oreos… I am planning to make carrot cupcakes for Easter.

I decided agains the Oreos this time and just went with carrot cake. Which was definitely delicious. 🙂
