This surprise inside polka dot cake is naturally colored with kale and made without a cake pop maker! But don’t worry: the kale polka dot cake doesn’t taste of kale at all!
All-Natural Green Kale Polka Dot Cake
Ingredients:
All-Natural Green Kale Polka Dots
- 2/3 cup flour (90g)
- 1/2 stick butter (60g)
- 2 tbsp sugar (30g)
- 3 tbsp kale puree (1 – 2 curly kale leaves)
Butter Cake
- 1/2 stick butter (60g)
- 1/2 cup sugar (100g)
- 2 eggs
- 1/2 cup milk (120ml)
- 2 cups flour (250g)
- 1 tbsp baking powder
Directions:
Preheat the oven to 350°F (180°C) and line a springform pan with baking paper.
All-Natural Green Kale Polka Dots
For the kale puree: Remove the stalks, use just the leafy parts of the kale. Boil the kale with some water for 5 minutes, drain and refresh with cold water. Using a stick blender, puree the kale until smooth. Squeeze out excess water.
Knead together flour, butter, sugar and 3 tablespoons kale puree.
Roll the dough into long log shapes, about 1/2 inch (1cm) in diameter.

Butter Cake
Cream together butter and sugar. Add the eggs, milk, flour and baking powder. Then beat on medium speed until well combined.
All-Natural Green Kale Polka Dot Cake
Pour half of the butter cake batter into the springform pan. Add the kale logs in concentric circles.
Bake the cake for 5 minutes. This is necessary for the polka dots to stay on the bottom of the cake.
Then pour the other half of the butter cake batter on top. Bake the kale polka dot cake for another 30 minutes or until a skewer inserted into the middle of the cake comes out clean.
