This delicious blue banana milk is vegan and all-naturally colored with red cabbage! I love naturally colored blue food! 😀 But it’s difficult to color drinks blue with natural red cabbage food coloring because red cabbage dye is ph-sensitive. And most drinks and beverages are acidic; so the amazing blue color turns purple. But banana milk is just slightly acidic, so it’s possible to color banana milk naturally blue with red cabbage! Yay! 😀
Ingredients:
- 1 banana
- 1 cup soy milk or water
- homemade natural blue food coloring (made with red cabbage & baking soda)
- optional: 1 drop peppermint essential oil
Decorate the glass with a sugar rim – I used peppermint-flavored naturally colored blue sugar.
Blend the banana together with soy milk or water. Color the banana milk with some drops natural blue food coloring. If it turns purple, add some grains of baking soda. Don’t add too much natural blue food coloring, or the banana milk will taste of red cabbage. If it tastes of red cabbage, you can mask the flavor with one drop of peppermint essential oil.

can you use oat milk or coconut milk as well?
Yes, I think coconut and oat milk are rather alkaline than acidic so it should work.
