Yellow Sweet Clover Lemonade (Melilotus officinalis)

Yellow Sweet Clover Lemonade (Melilotus officinalis)

Today I made delicious homemade summer lemonade with sweet clover flowers. Yellow sweet clover (Melilotus officinalis) – which is also called yellow melilot, king’s clover, common melilot, honey clover and ribbed melilot – is a tall herb which grows on wastelands, blooms in June and July and has a sweet coumarin flavor.

Ingredients

  • handful yellow sweet clover (Melilotus officinalis)
  • 3 tbsp sugar
  • 1 l water (I used tap water as it’s safe to drink where I live)

Stir the sugar into the water. Add sweet clover flowers and infuse the lemonade overnight in the fridge.

Sweet clover lemonade has a wonderful sweet coumarin flavor. It tastes even better than woodruff lemonade – and I love woodruff! 😉 I’ll definitely make the lemonade again! 😀

How To Find Yellow Sweet Clover

Sweet clover is about 4 – 6 feet/ 1.2 – 1.8 m high.  It usually grows on wastelands, roadsides, railroad embankments, landfills and quarries. It begins to bloom in June or July. The flowers smell sweet and the leaves look like longer clover leaves.

The white melilot (Melilotus albus) is even more common and therefore easier to find. White sweet clover is also edible, but it has a bit less flavor.

Here you’ll find my recipe for homemade elderflower cordial and homemade rose water hydrosol.
