In a separate bowl, beat the egg yolks, sugar and vanilla sugar until thick and creamy. Fold in the egg whites and the flour.

German Buttercream

Whisk together cornstarch and 1/2 cup soy milk. Bring the remaining soy milk, sugar and vanilla sugar to a simmer. Pour the cornstarch mixture into the boiling milk while constantly stirring. Continue to cook the pudding until it thickens (about a minute or so). Remove the pudding from heat and let it cool to room temperature.

Now beat the butter with an electric mixer until smooth and creamy. Add the pudding, one tablespoon at a time. Mix until it’s well incorporated but don’t overmix the German buttercream.

Spread the buttercream onto each sponge cake layer and stack the layers on top of each other. Then cover the naturally colored polka dot cake with buttercream. Put the naturally colored polka dot cake into fridge to set and cool.

  1. Those polka dots are great in the cake! I am thinking they would also be good even on their own, for cake-pops or on top of other desserts. And the colours are so nice, they look edible, not out of a crayon box. Lovely post!
