Cherry Yogurt Ice Cream – Dairy-Free, No Raw Eggs

Ingredients:

Directions:

Whisk together soy milk, vanilla sugar and egg yolks in a saucepan. While constantly stirring, cook the custard over medium heat until thickened. Let the custard cool completely.

Coarsely chop the homemade candied cherries.

When the custard is cool, whisk in the soy yogurt (you can also use another plant-based yogurt) and the chopped candied cherries.

Freeze the cherry yogurt ice cream in an ice cream maker. If you don’t have an ice cream maker, pour the ice cream mixture into a popsicle mold and make cherry yogurt popsicles instead!

  1. Love that you cook the custard. I’ve always cooked the custard when using eggs as did my mother before me. I can still here her stern warning about ice cream with raw eggs.
