Green is fairly easy to achieve with homemade natural food coloring. I’ve already made all-natural green Christmas cookies with pistachio nuts, matcha tea, curly kale and sunflower seeds. Yes, sunflower seeds can dye food green! 😀

Besides these four natural green food dyes, you can also dye food green with green peas and spinach. But green peas can leave a pea taste in baked goods, and spinach is better used raw as a food dye. So these four – pistachio nuts, matcha, curly kale and sunflower seeds – are my favorites to dye Christmas cookies naturally green!

Did you know that you can use sunflower seeds to make natural green food dye? Sunflower seeds contain chlorogenic acid which turns green in an alkaline environment (baking soda). However, sunflower seeds are not as easy to use as natural green food coloring in recipes, especially in cookies or cakes. It took me a few tries until I got this natural green cookie recipe right. Sunflower seeds dye cookies a surprisingly dark green – perfect for green Christmas tree cookies!

By the way, I actually made these naturally green Christmas cookies with sunflower seeds as Christmas treat for my dog Khaleesi. But these green sunflower seed cookies are just too good to not eat them yourself! Because these cookies were for my dog, I made them without sugar, but feel free to add sugar, honey or even salt for savory cookies. 😉
